- Lettuce chopped
- 1 chicken breast (marinated in Island Vinaigrette)
- 2 fruit cups of diced mangoes
- 1 1/2 avocados
- 3=4 oz crumbled goat cheese
- 1 cup Island Vinaigrette divided
Marinate chicken in 1/4 cup Island Vinaigrette overnight or at least 4 hours. Grill or saute the chicken breast until full cooked and slice. Chop lettuce and place in big bowl. Drain the 2 fruit cups of mangoes and place them in a medium sized bowl. Dice the avocados. Add the avocado and goat cheese to medium bowl with mangoes. Pour 1/2 cup of Island Vinaigrette in medium bowl. Fold/mix lightly all ingredients in medium bowl. Pour mango/cheese/avocado mix onto lettuce in big bowl. Then, add cooked, sliced chicken to the big bowl. Add a few more sprinkles of goat cheese and drizzle 1/4 cup more of Island Vinaigrette on top. Enjoy! This makes 2-2.5 servings.
