- 2 chicken breasts
- 1 cup chopped celery
- 1 cup dried mangoes chopped or torn into smaller pieces
- 1/2 cup dried mixed berries (cranberry, cherry, blueberry mix)
- salt & pepper to your liking
- 6 oz Island Vinaigrette
Cut chicken breast into wide strips (about 3-4 strips each breast) and boil chicken until fully cooked. Drain the chicken and allow it to cool for a few minutes. Shred the chicken into small pieces. In a large bowl, mix chicken, celery, mangoes, berries, salt, & pepper. Then, add Island Vinaigrette and mix well. Serve on your choice of bread, croissant, tortilla, or enjoy it as it is!
