- Roughly 1 lbs Tater tots (frozen)
- Cream of chicken soup (1 can)
- 1/2 cup chopped onion (frozen)
- Diced tomatoes (1 can drained)
- 1 1/2 cups sour cream
- 2 cups cheddar cheese
- Salt & Pepper to taste
- 1/4 cup Parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon dried parsley
Grease a 9x13 baking dish. Pour roughly 1 lbs of frozen tater tots in the baking dish. You want just enough to cover the bottom of the dish in just 1 layer. Let the tots thaw out at room temperature for about 1 hour covered. Once they have thawed enough, pour them into a large bowl and mash them with a potato masher. Add the soup, onion, tomatoes, sour cream, cheddar cheese, and enough salt & pepper to your liking to the thawed tots and mix well. Pour the mixture into the baking dish. Sprinkle the top with Parmesan cheese, paprika, and parsley. Bake at 350 for 40-45 min.
You can prepare this the night before and refrigerate covered until you are ready to bake the next morning.
